Gather your ingredients and kitchen tools, then cook with me in real time, and enjoy a delicious meal by the end of our class.

1. Get your ingredients

  • 2 pita breads

  • Olive oil

  • 8 oz. tomatoes (cherry or vine-ripened)

  • 1 English or 2 Persian cucumbers

  • 1 cup arugula

  • ½ cup cilantro leaves and stems

  • ½ cup mint leaves

  • 2 scallions (optional)

  • 1 lemon

  • 1 clove garlic

  • Diamond Crystal kosher salt (see video below)

2. Gather your equipment

  • Chef’s knife

  • Cutting board

  • Clean kitchen towel

  • Medium bowl for trash and scraps

  • Mason jar with lid for dressing

  • Large bowl for salad

  • Measuring spoons

  • Citrus juicer

  • Microplane, fine grater, or garlic press

  • Sheet pan

  • Flat, rigid spatula
