1. Get your ingredients
2 pita breads
Olive oil
8 oz. tomatoes (cherry or vine-ripened)
1 English or 2 Persian cucumbers
1 cup arugula
½ cup cilantro leaves and stems
½ cup mint leaves
2 scallions (optional)
1 lemon
1 clove garlic
Diamond Crystal kosher salt (see video below)

Chef’s knife
Cutting board
Clean kitchen towel
Medium bowl for trash and scraps
Mason jar with lid for dressing
Large bowl for salad
Measuring spoons
Citrus juicer
Microplane, fine grater, or garlic press
Sheet pan
Flat, rigid spatula
