Kale Caesar Salad

Gather your ingredients and kitchen tools, then cook with me in real time, and enjoy a delicious meal by the end of our class.

1. Get your ingredients

  • 1 bunch green kale (sometimes called “curly”)

  • 1 lemon

  • 1 clove garlic

  • 2 tsp Dijon mustard

  • ½ cup plant-based mayonnaise (see video below for my recommendation)

  • 1 tsp Worcestershire sauce

  • ½ tsp mushroom powder

  • ¼ tsp ground black pepper

  • ¼ cup panko bread crumbs

  • Olive oil

  • Kosher salt (see video below for my recommendation)

This is the mushroom powder I like to use. It’s in the spice section at Trader Joe’s. It’s optional, so if you can’t find it, don’t worry. It just provides a fish-free savory flavor to the Caesar dressing.

2. Gather your equipment

  • Chef’s knife

  • Cutting board

  • Small bowl for dressing

  • Medium bowl for trash and scraps

  • Large bowl for salad

  • 2 clean kitchen towels

  • Dry measuring cups

  • Measuring spoons

  • Citrus juicer

  • Microplane, fine grater, or garlic press

  • Whisk

  • 10” or 12” nonstick pan

  • Spatula
