Kale Caesar Salad

Gather your ingredients and kitchen tools, then cook with me in real time, and enjoy a delicious meal by the end of our class.
1. Get your ingredients
1 bunch green kale (sometimes called “curly”)
1 lemon
1 clove garlic
2 tsp Dijon mustard
½ cup plant-based mayonnaise (see video below for my recommendation)
1 tsp Worcestershire sauce
½ tsp mushroom powder
¼ tsp ground black pepper
¼ cup panko bread crumbs
Olive oil
Kosher salt (see video below for my recommendation)
This is the mushroom powder I like to use. It’s in the spice section at Trader Joe’s. It’s optional, so if you can’t find it, don’t worry. It just provides a fish-free savory flavor to the Caesar dressing.

Small bowl for dressing
Medium bowl for trash and scraps
Large bowl for salad
2 clean kitchen towels
Dry measuring cups
Measuring spoons
Citrus juicer
Microplane, fine grater, or garlic press
Whisk
10” or 12” nonstick pan
