Zucchini Ribbons with Fried Shallots

Gather your ingredients and kitchen tools, then cook with me in real time, and enjoy a delicious meal by the end of our class.

1. Get your ingredients

  • 1-4 zucchini (each squash makes about 1 serving)

  • 2 shallots

  • Fresh herb of your choice (mint, dill, and parsley are nice)

  • 1 clove garlic

  • 1 lemon

  • 2T olive oil

  • ¼C neutral-tasting oil (such as avocado, sunflower, vegetable, or grapeseed)

  • Diamond Crystal kosher salt (see video below to see why I prefer this salt)

2. Gather your equipment

  • Chef’s knife

  • Cutting board

  • Medium bowl for trash and scraps

  • Clean kitchen towel

  • Vegetable peeler

  • Dry measuring cups

  • Measuring spoons

  • Citrus juicer

  • 10” or 12” nonstick pan

  • Tongs
