Zucchini Ribbons with Fried Shallots

1. Get your ingredients
1-4 zucchini (each squash makes about 1 serving)
2 shallots
Fresh herb of your choice (mint, dill, and parsley are nice)
1 clove garlic
1 lemon
2T olive oil
¼C neutral-tasting oil (such as avocado, sunflower, vegetable, or grapeseed)
Diamond Crystal kosher salt (see video below to see why I prefer this salt)
2. Gather your equipment
Chef’s knife
Cutting board
Medium bowl for trash and scraps
Clean kitchen towel
Vegetable peeler
Dry measuring cups
Measuring spoons
Citrus juicer
10” or 12” nonstick pan
