At the time of writing this (August 2019), these items total $288.19. You certainly don’t need to buy all of them, but I have found each of these items to be incredibly helpful and reliable in my kitchen. If you are looking to save money and only buy the essentials, I would recommend only getting the chef knife, ThermoPop, spice grinder, peeler, and Microplane ($126.92). With these few tools, you will be able to cook alongside me in the videos without making any significant compromises.
Pre-Course Pantry Staples
Real extra virgin olive oil (sometimes referred to as EVOO)
Most of the stuff sold in supermarkets is junk. This one from Costco is the best quality for the price by a significant margin. Tastes really delicious, and it’s good for your body.
Avocado oil
This is my choice for neutral oil—in place of canola or vegetable oil. It has the highest smoke point of all cooking oils (520ºF), which means you’ll be able to brown food more easily and have less smoke in your kitchen.
High-quality vinegar
Pick up a good bottle of champagne vinegar, sherry vinegar, or other wine vinegar. I really like this brand. Avoid cheap brands like Star or Heinz.
Kosher salt
Get rid of your table salt, and buy a box of kosher salt for $3. It’s the choice of professional chefs for its clean flavor and great texture.
Whole black peppercorns
We will grind our own pepper each and every time we use it. The pre-ground stuff sold at the store was produced months ago, and the really delicate flavors are long gone. (The oils responsible for the flavor evaporate in the first 24 hours.) It’s also nice to be able to control the size of the grind depending on the application.
